1 ½Cyellow summer squashabout 1 medium squash
1Cyellow bell pepperabout half a large pepper
¼Ccelerywash and slice
½tspginger rootwash, peel, and mince

Instructions
Wash all produce. Chop summer squash, bell pepper, and celery.
Add squash, bell pepper, celery, and 1-1/2 cups chicken bone broth to medium saucepan.
Bring to a boil, reduced heat, cover and simmer about 5 minutes or until vegetables are just tender.
Peel ginger root and mince. Add to soup mix.
Carefully transfer soup to a blender. Blend on high until smooth and creamy.
PROTEIN + ELECTROLYTE BOOST OPTIONAL - add 1T pure collagen protein + 1/2 mineral tablet or 5 liquid mineral drops to blender. Blend on low just until mixed.
Serve soup in a bowl and top with OPTIONAL GARNISH - chopped Italian parsley leaves + a dash of paprika. Or sip warm soup from a mug.
Or add soup to a 16-ounce glass bottle or jar. Add up to 1/2 cup more broth to fill.
Store soup in refrigerator and use within 4 days. Freeze leftover soup. If freezing in glass bottles reduce soup amount to 14 ounces so bottle does not break in freezer.
