Instructions
Wash produce. Peel carrots and slice. Remove stem, membranes and seeds from bell pepper and chop. Peel ginger root and mince.
Add carrots, bell pepper, ginger, turmeric powder and 1-1/2 cups broth to medium saucepan. Bring to a boil. Reduce heat. Cover and simmer until carrots are just tender about 10-15 minutes.
Carefully transfer to blender and blend until smooth and creamy.
PROTEIN + ELECTROLYTE BOOST OPTIONAL - add 1T collagen powder and 1/2 mineral tablet to blender. Blend on low until mixed.
Add soup to a bowl or a mug and serve immediately. OPTIONAL GARNISH - add a fresh sprig of rosemary to bowl.
Or transfer soup to 16-ounce glass bottle or jar adding up to 1/2 cup more broth to fill. Soup may be sipped hot or cold.
Store unused soup in refrigerator. Use or freeze within 4 days. Soup may be frozen. If freezing soup in 16-ounce glass bottle or jar reduce amount to 14 ounces so glass will not break in freezer.
