Marinated Zucchini Slices

Ingredients

- 1 medium zucchini
- 1/4 red bell pepper about 1/4 cup
Condiments
- 1/4 cup red wine vinegar
Dried Spices - Seasonings
- 1/4 tsp garlic powder more or less, to taste
Sweeteners
- 20 drops 100% pure Stevia liquid more or less, to taste

Instructions
- Mix 1 cup boiling water with 1/4 cup red wine vinegar, 20 drops Stevia, and 1/4 teaspoon garlic powder to make marinade. If using, add salt and pepper, to taste.
- Wash zucchini, cut into thin slices, discard ends. Chop one fourth of a red bell pepper, about 1/4 cup. Layer zucchini slices and chopped red bell pepper in a glass jar or bowl.
- Pour marinade over zucchini and red bell peppers and cover. Let stand at room temperature to marinate at least one hour or until zucchini absorbs flavor of marinade. Refrigerate any leftovers.
