Watermelon Arugula Salad

- 1-1/2 cup watermelon cubed
- 1-1/2 teaspoon lime juice fresh squeezed

- 1/2 cup queso fresco or use feta cheese

- 1 large handful handful fresh arugula

Instructions
- Cube and measure 1-1/2 cups watermelon. Add to a medium-sized glass bowl. Add 1/2 cup cubed or crumbled Queso Fresco or Feta cheese to bowl.
- Wash large handful of fresh arugula leaves, add to salad spinner to remove excess water, and add to bowl. Squeeze lime and add 1-1/2 teaspoon juice. Add fresh lime juice. Optional - add a pinch of salt. Toss all ingredients lightly.
- Serve immediately or cover and keep refrigerated until served. Store leftovers in airtight container in refrigerator.
