Turkey Burger Strips

Ingredients

- 1/2 lb 93% extra lean ground turkey or use ground chicken if not on Jump Start Plan
Fresh Vegetables
- 1 large carrot shredded, about 1 cup
Dairy
- 1/2 cup reduced-fat cheddar or Mexican cheese shredded, or use reduced fat Pepper Jack
Dried Spices - Seasonings
- 1 tbsp no-salt seasoning like Mrs. Dash or Kirkland Brand
Optional
- serve with Dijon mustard w/o added sugar like Maille brand
- serve with Butter or Bibb lettuce leaves to use as "buns"

Instructions
- Remove individual lettuce leaves and wash well. Spin in a salad spinner to remove excess water. Add to large bowl and set aside.
- Wash carrot, trim ends and discard. Using a grater, shred carrot. Add one cup shredded carrot to a large mixing bowl along with ground turkey and seasoning. Mix well.
- Lightly spray large frying pan with a lid with propellant-free spray oil {avocado, coconut, or extra virgin olive oil} and gently warm over medium-high heat.
- Shape burger mixture into four small patties. Add to pan and cook until lightly browned on one side, about 3 to 5 minutes.
- Flip burgers, reduce heat, and cover pan. Continue cooking until almost cooked through, about 3 to 5 minutes.
- Add 1/2 slice cheese to each burger. Cover pan and continue cooking until cheese melts, about 3 to 5 minutes.
- Remove burgers from heat. If using, add salt and pepper, to taste. Slice burgers into strips.
- Wrap each burger strip in lettuce leaf. Optional top with Dijon mustard. Note - use a brand like Maille without added sugar.
- Goes well with roasted cauliflower as a side dish.
