Instructions
  1. Wash vegetables. Peel, and cube sweet potato. Fill a pot halfway with water. If using, add a dash of salt. Add sweet potato cubes and bring to a boil over high heat. Boil until sweet potatoes are just tender, about 10 minutes. Remove from heat and drain into a colander. Set aside.
  2. In the meantime, chop onion and peel and press or mince garlic clove. Set aside.
  3. Lightly spray a large skillet or frying pan with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil}. Gently warm over medium heat.
  4. Add ground meat of choice, onion, garlic, sweet potatoes, and poultry spice. Saute until meat is browned and vegetables are tender. If using, add salt and pepper to taste.
  5. Optional - cook sweet potato hash in two small individual cast iron skillets and crack two eggs on the top of each skillet toward end of cooking time. Or serve with eggs cooked your way, on the side.
