  • 3/4 cup stewed tomatoes w/o added sugar like Muir Glen brand, about 1/2 of a 14.5 oz. can
Dried Spices - Seasonings
  • 1 tsp Ancho Chili Pepper powder, more or less, to taste use 1/2t for mild flavor, 1-1/2t to 2t for extra spicy
  • 1/2 tsp ground cinnamon
Optional Garnish
  • sliced green onion

Instructions
  1. Wash sweet potato[es]. Extra large sweet potato, cut in half lengthwise. Small sweet potatoes cut an "X" in top. Place on a paper towel {skin side down for extra large sweet potato halves} on microwave turn table. Microwave 3 to 5 minutes for small sweet potatoes and 5 to 7 minutes for extra large sweet potato. If baking, preheat oven or toaster oven to 400 degrees. Place sweet potato on parchment lined baking sheet. Bake 45 minutes or until tender.
  2. In the meantime, add 1/2 can stewed tomatoes to a food processor and pulse to break up tomatoes into small pieces. Measure out 3/4 cup processed stewed tomatoes. Set aside.
  3. Lightly spray skillet or frying pan with propellant-free 100% oil, cooking oil spray and warm over medium-high heat. Add meat and saute about 3 to 5 minutes or until browned.
  4. Add processed stewed tomatoes, 1 teaspoon Ancho chili pepper powder, and 1/2 teaspoon ground cinnamon. Note - for milder flavor reduce chili powder to 1/2 teaspoon. For spicier flavor use 1-1/2 to 2 teaspoon chili powder.
  5. Reduce heat to low and simmer meat mixture until it thickens, about 5 to 10 minutes. Remove from heat. If using, add salt and pepper to taste.
  6. Place sliced sweet potatoes in large pasta bowl and top each with half of the meat mixture.
  7. Optional Garnish - garnish each serving with sliced green onion.
