Stuffed Sweet Potatoes

Ingredients

- 1/2 lb 93% extra lean ground turkey or use ground chicken or extra lean ground beef
Fresh Vegetables
- 1 extra large sweet potato or 2 medium sweet potatoes
Canned - Jarred
- 3/4 cup stewed tomatoes w/o added sugar like Muir Glen brand, about 1/2 of a 14.5 oz. can
Dried Spices - Seasonings
- 1 tsp Ancho Chili Pepper powder, more or less, to taste use 1/2t for mild flavor, 1-1/2t to 2t for extra spicy
- 1/2 tsp ground cinnamon
Optional Garnish
- sliced green onion

Instructions
- Wash sweet potato[es]. Extra large sweet potato, cut in half lengthwise. Small sweet potatoes cut an "X" in top. Place on a paper towel {skin side down for extra large sweet potato halves} on microwave turn table. Microwave 3 to 5 minutes for small sweet potatoes and 5 to 7 minutes for extra large sweet potato. If baking, preheat oven or toaster oven to 400 degrees. Place sweet potato on parchment lined baking sheet. Bake 45 minutes or until tender.
- In the meantime, add 1/2 can stewed tomatoes to a food processor and pulse to break up tomatoes into small pieces. Measure out 3/4 cup processed stewed tomatoes. Set aside.
- Lightly spray skillet or frying pan with propellant-free 100% oil, cooking oil spray and warm over medium-high heat. Add meat and saute about 3 to 5 minutes or until browned.
- Add processed stewed tomatoes, 1 teaspoon Ancho chili pepper powder, and 1/2 teaspoon ground cinnamon. Note - for milder flavor reduce chili powder to 1/2 teaspoon. For spicier flavor use 1-1/2 to 2 teaspoon chili powder.
- Reduce heat to low and simmer meat mixture until it thickens, about 5 to 10 minutes. Remove from heat. If using, add salt and pepper to taste.
- Place sliced sweet potatoes in large pasta bowl and top each with half of the meat mixture.
- Optional Garnish - garnish each serving with sliced green onion.
