Instructions
  1. Fresh-squeeze lime and set juice aside. Peel and press or finely mince garlic cloves. Set aside.
  2. Cut fat from beef and cut into strips. Mix beef strips with fajita seasoning mix. Fajita seasoning - 2t smoked or sweet paprika, 1/4t Ancho Chili Pepper powder {more or less, to taste, for spicier or milder flavor}, and 3/4t of each of the following: onion powder, garlic powder, ground cumin.
  3. Lightly spray skillet or frying pan with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil} and warm over medium high heat.
  4. Add seasoned beef strips and garlic to skillet. Saute 3 to 5 minutes or until beef is just cooked. Add lime juice and mix well.
  5. Add frozen tri-color or 3 pepper and onion blend to skillet. Continue cooking until vegetables are tender.
  6. Serve with Romaine lettuce leaves in place of tortillas and top with all-natural picante sauce, salsa fresca, or pico de gallo.
