- 1 cup dried split peas

- 32 ounce container chicken broth choose a clean brand w/o added sugar or oil like Field Day Organic
Fresh Vegetables
- 1-1/2 cups carrot[s] about 3 carrots
- 1 cup celery about 2 celery stalks
- 1/2 cup onion about 1 small onion

Instructions
- Rinse split-peas. Add to soup pot with chicken broth. Bring to a boil, reduce heat, cover and simmer until peas are just tender about 30 minutes. Using a large soup spoon, skim off and discard any foam that forms on top.
- In the meantime, wash vegetables. Peel and chop carrots and onion into small pieces. Chop celery into small pieces. Add to soup pot. Bring soup to boil, reduced heat, cover and simmer until vegetables are tender, about 15 to 30 minutes.
- Remove soup from heat and serve. Add salt and pepper, to taste. Note - for a smoother soup, carefully transfer to the bowl of a food processor. Process soup until smooth and creamy before serving.
- CROCK-POT METHOD - add rinsed split peas, chicken broth, chopped carrots, celery, and onion to crock pot. Cook on low {longer} or medium {quicker} heat until peas are tender.
