- 6 large eggs use 2 eggs + 4 egg whites

- 1 cup baby spinach
- 1/4 cup onion

Instructions
- Whisk 2 eggs with 4 egg whites. Set aside. Chop onion and peel and press or minced garlic.
- Lightly spray an omelette pan with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil}. Warm over medium-high heat.
- Add half of the onion and garlic to pan and cook until onions are tender. Pour half of the eggs into pan. Add half of the spinach. Cook until eggs are almost done and then flip omelette in half.
- Repeat and make second omelette.
- Serve with picante sauce, salsa fresca, or pico de gallo.
