Instructions
  1. Wash squash, apple, onions, and lemon. Cut ends off squash and discard. Slice squash into thin rounds and set aside.
  2. Remove trout from tins. Optional - remove skin and discard. Place trout on paper towels to absorb excess oil.
  3. Quarter and core apple. Chop and measure 1/4 cup. Add to a medium-sized bowl. Chop green onion or scallions. Add 2 tablespoons to bowl along with the smoked trout.
  4. Using a zesting tool, zest lemon rind into a small bowl. Set aside. Add 1 tablespoon fresh-squeezed lemon juice to bowl. Mix all ingredients well.
  5. Add smoked trout salad to yellow squash rounds, top with lemon zest, and serve.
