Smoked Trout Salad

Ingredients
Canned - Jarred
- 2 - 3.2 ounce tins smoked trout in olive oil try an earth-friendly all natural brand like Cole's
Fresh Fruit
- 1/4 cup red apple[s]
- 1 lemon zest + 1 tablespoon juice
Fresh Vegetables
- 2 tablespoons green onion or scallion
- 2 medium yellow summer squash

Instructions
- Wash squash, apple, onions, and lemon. Cut ends off squash and discard. Slice squash into thin rounds and set aside.
- Remove trout from tins. Optional - remove skin and discard. Place trout on paper towels to absorb excess oil.
- Quarter and core apple. Chop and measure 1/4 cup. Add to a medium-sized bowl. Chop green onion or scallions. Add 2 tablespoons to bowl along with the smoked trout.
- Using a zesting tool, zest lemon rind into a small bowl. Set aside. Add 1 tablespoon fresh-squeezed lemon juice to bowl. Mix all ingredients well.
- Add smoked trout salad to yellow squash rounds, top with lemon zest, and serve.
