- 1/2 small green cabbage aobut 6 cup shredded, loosely packed
- 2 medium carrot[s] about 1 cup shredded, tightly packed

Instructions
- Wash vegetables. Cut cabbage in half. Double this recipe for 4 servings or save 1/2 of cabbage for another batch of coleslaw. If saving, wrap tightly with saran wrap and refrigerate.
- Cut stem from cabbage. Place cut side of cabbage down and thinly slice across it, cutting it into thin strips. Cut thin strips of cabbage into smaller pieces and cut up any large pieces. Add shredded cabbage to large bowl.
- Peel carrots, remove ends and discard. Grate carrots and add to bowl.
- Mix in 1/2 cup low calorie mock mayonnaise. If using, add salt and pepper, to taste.
- To make low calorie mock mayonnaise, add a 7 oz. container {about 1 cup} whole milk plain Greek yogurt to a small bowl. Whisk in 1 tablespoon each: extra virgin olive oil, apple cider vinegar, Dijon mustard {w/o added sugar like Maille brand}. Stir in 10 drops 100% pure Stevia liquid. Add more Stevia drops, to taste, if not sweet enough.
- Optional Garnish - garnish with chopped Italian or flat-leaf parsley.
