- 2 medium zucchini

Instructions
- Wash and slice zucchini. Discard ends. Peel and mince or press garlic. Lightly spray large skillet or frying pan with propellant-free spray oil {avocado, coconut, or extra virgin olive oil}. Warm over medium heat. Add zucchini and garlic to pan. Sprinkle with onion powder and if using, add salt and pepper, to taste.
- Cook zucchini, turning every few minutes until zucchini is lightly browned on both sides. Remove from heat and serve. Or if you like zucchini more tender, turn off heat, cover pan, and let stand 5 minutes before serving.
