Instructions
  1. If using, cut end off Romaine lettuce bunch. Separate leaves and wash well. Add to a salad spinner and spin to remove excess water. Add to a bowl or decorative plate and set aside.
  2. Peel and press or mince garlic. Lightly spray a large frying pan or skillet with propellant-free cooking oil {avocado, coconut, or extra virgin olive oil} and warm over medium high heat.
  3. Add fresh or frozen shrimp to pan. Sprinkle with taco - fajita seasoning. Add frozen vegetables and cook until shrimp is done and vegetables are tender, about 3 to 5 minutes.
  4. Optional - serve shrimp fajitas on Romaine lettuce "tortillas" and top with picante sauce or fresh salsa. Goes well with Taco Spiced "Riced" cauliflower. Recipe link follows.
