- 6 large eggs
Fresh Vegetables
- low-cal veggies of choice like onion, bell pepper, spinach, mushroom, broccoli, kale, jalapeno peppers, serrano peppers, zucchini, asparagus, arugula, green chilies, etc.
Fresh Herbs - Spices
- fresh herbs and spices of choice like garlic, chives, basil, etc.
Optional
- 2 tomatoes or oranges

Instructions
- Slice your choice of two tomatoes oranges. Arrange slices on two dinner plates. Set aside.
- Add 2 eggs and 4 egg whites to a bowl. Whisk together and set aside.
- Wash and chop fresh vegetables, herbs, and spices of choice.
- Lightly spray a frying pan or skillet with propellant-free 100% oil cooking spray oil {avocado, coconut, or extra virgin olive oil}. Gently warm over medium-high heat. Add vegetables, herbs, and spices and saute until tender.
- Add eggs to pan and scramble until eggs are just cooked. Remove from heat. Divide scrambled eggs between the two plates.
