Instructions
  1. Slice your choice of two tomatoes oranges. Arrange slices on two dinner plates. Set aside.
  2. Add 2 eggs and 4 egg whites to a bowl. Whisk together and set aside.
  3. Wash and chop fresh vegetables, herbs, and spices of choice.
  4. Lightly spray a frying pan or skillet with propellant-free 100% oil cooking spray oil {avocado, coconut, or extra virgin olive oil}. Gently warm over medium-high heat. Add vegetables, herbs, and spices and saute until tender.
  5. Add eggs to pan and scramble until eggs are just cooked. Remove from heat. Divide scrambled eggs between the two plates.
