- 2 tomatoes
- 1 red bell pepepr
- 1/2 onion

- 1 lime fresh squeezed

- 1 clove garlic peeled and pressed or minced

Instructions
- Line a baking sheet with parchment paper or foil. Add tomatoes, quartered bell pepper, and thick sliced onion. Broil on high about 5 to 10 minutes or until slightly blackened. Remove from oven, turn vegetables over with tongs. Broil another 5 to 10 minutes or until vegetables are cooked.
- Let vegetables cool. Peel skin off of bell pepper quarters. Add cooked vegetables to a food processor or blender along with juice of one lime and peeled, pressed or minced garlic. Blend well.
- If using, add salt and pepper, to taste.
