Riced Cauliflower
Riced cauliflower is an easy to make low carb, low calorie substitute for traditional white rice. Start with a head of fresh cauliflower or buy packaged riced cauliflower in the freezer section of your local grocery store.

Instructions
  1. If using frozen package of riced cauliflower, follow package instructions. If using fresh cauliflower, wash, remove stem and leaves, and cut into small florets.
  2. Add florets to food processor or blender. Pulse into rice-sized pieces. Or use medium/large hole side of a box cheese grater.
  3. Lightly spray a large skillet or frying pan with propellant-free cooking oil spray {avocado, coconut, or extra virgin olive oil}. Warm over medium heat.
  4. Add riced cauliflower and sauté until lightly browned. Reduce heat, cover skillet with lid. Cook about 5 minutes longer or until riced cauliflower is tender.
  5. You can also add riced cauliflower to a pot of boiling water. Boil for about 5 minutes or until riced cauliflower is just tender.
  6. Pour cooked riced cauliflower in colander to drain water. If using, add salt and pepper, to taste.
