Reduced-calorie Raspberry Vinaigrette

Ingredients

- 6 oz container raspberries
- 1 lime fresh squeezed
Condiments
- 2 tbsp red wine vinegar
Oils
- 1/4 cup extra virgin olive oil
Sweeteners
- 30 to 45 drops 100% pure Stevia liquid more or less, to taste

Instructions
- Place a wire mesh sieve over a bowl. Wash raspberries and add to sieve. Press raspberries with the back of a spoon so juice drains into bowl while leaving seeds behind.
- Squeeze lime and pour juice and vinegar through sieve.
- Remove sieve and discard seeds. Whisk oil and Stevia drops into raspberry juice mixture, using more or less Stevia, to taste.
- If using, add salt and pepper, to taste.
- Optional - add dressing to the blender cup of a blender and mix on high before serving.
