Ratatouille
Skinny5 Ratatouille is a simplified, 5 ingredient version of traditional Ratatouille which contains a tomato-based sauce with fresh Basil, pressed garlic, and chopped onions, plus yellow vegetable rounds of Summer squash and yellow bell peppers. This dish tastes great paired with Skinny5 Marinara Sauce and a sprinkle of Parmesan cheese.

Instructions
  1. NOTE—for the best presentation, choose vegetables with about the same circumference.
  2. Preheat oven to 375 degrees.
  3. Wash vegetables. Slice eggplant and zucchini, skin on, into thin rounds. Discard ends. Peel onion slice into thin rounds. Remove stem from red bell pepper. Slice into thin rounds. Discard ends.
  4. Lightly spray a round non-stick cake pan with non-propellant 100% oil spray {olive oil, avocado, or coconut}. Arrange alternating vegetable slices: zucchini, onion, bell pepper, eggplant, in a spiral from the outside edge as pictured.
  5. If you run out of one vegetable or another in the center, add enough slices of any vegetable to fill the middle.
  6. Lightly spray vegetables with non-propellant oil spray and sprinkle with Herbes de Provence. Optional—add salt and pepper.
  7. Bake uncovered for 30 to 45 minutes or until vegetables are tender. Remove from oven and serve.
  8. This dish tastes great paired with Skinny5 Marinara Sauce and a sprinkle of Parmesan cheese.
