Quick Chicken Salad
Use leftover chicken for a quick and easy lunch. Low calorie Skinny5 mock mayo keeps the calories down or sub with avocado oil mayonnaise. Also makes a great make and take party appetizer.

  • 1/4 cup Skinny5 low-cal mock mayo or use avocado oil mayonnaise
Optional

Instructions
  1. Cube cooked chicken breast and measure 2 cups. Wash and slice grapes and celery. Chop walnuts.
  2. Add ingredients to a medium-sized bowl. Mix in 1/4 cup Skinny5 Mock Mayo {recipe link follows} or use avocado oil mayonnaise {higher in calories}. Add salt and pepper, to taste.
  3. Skinny5 Mock Mayo - mix 1/4 cup whole milk plain Greek yogurt with 3/4 teaspoon each: extra virgin olive oil, apple cider vinegar, Dijon or stone ground mustard {w/o added sugar like Maille brand}. Add 5 drops liquid Stevia, more or less, to taste.
  4. Optional - remove stem from head of radicchio. Separate leaves, wash, and add to a salad spinner to remove excess water. Add chicken salad as pictured and serve.
