Quick Chicken Salad

Ingredients

- 2 cups chicken breast, cubed
Fresh Fruit
- 1 cup purple grapes sliced
Nuts - Seeds
- 1/4 cup raw walnuts or walnut pieces
Fresh Vegetables
- 1/2 cup celery sliced
Condiments
- 1/4 cup Skinny5 low-cal mock mayo or use avocado oil mayonnaise
Optional
- serve on radicchio leaves about 1 small head of radicchio

Instructions
- Cube cooked chicken breast and measure 2 cups. Wash and slice grapes and celery. Chop walnuts.
- Add ingredients to a medium-sized bowl. Mix in 1/4 cup Skinny5 Mock Mayo {recipe link follows} or use avocado oil mayonnaise {higher in calories}. Add salt and pepper, to taste.
- Skinny5 Mock Mayo - mix 1/4 cup whole milk plain Greek yogurt with 3/4 teaspoon each: extra virgin olive oil, apple cider vinegar, Dijon or stone ground mustard {w/o added sugar like Maille brand}. Add 5 drops liquid Stevia, more or less, to taste.
- Optional - remove stem from head of radicchio. Separate leaves, wash, and add to a salad spinner to remove excess water. Add chicken salad as pictured and serve.
