Purple Carrot Juice

Ingredients
Fresh Vegetables
- 4 purple carrot[s] or use orange carrots
Fresh Fruits
- 2 red apple[s]
- 1 varigated pink lemon or Meyer lemon or use a regular lemon
Fresh Herbs - Spices
- 2 inch piece ginger root
- 2 inch piece turmeric root omit if you cannot find fresh turmeric root

Instructions
- Wash all ingredients. Peel and chop ginger and turmeric. Cut off ends of carrots and discard. Optional, peel carrots. Chop into 2" pieces. Quarter apples and remove core. Cut lemon in half and peel. Remove excess pith and discard.
- Run all ingredients through a juicer. Divide into 2 glasses and serve. Optional - serve over ice or pour juice into glass bottles or jars with tight fitting lid and refrigerate until chilled.
- Note - you can sub orange carrots for purple carrots. Juice will be a different color but will taste the same.
