Ingredients

- 1 cup raw walnuts or walnut pieces
Dried Fruit
- 1 cup unsweetened coconut flakes
- 1/2 cup organic raisins sulfate-free
Dairy
- 4 egg whites

- 1-1/2 teaspoon ground cinnamon

Instructions
- Preheat oven to 350 degrees.
- Add egg whites to a medium-sized mixing bowl and whisk well.
- Add walnuts to a mini-chopper and pulverize into a moist flour. Add to bowl.
- Pulse coconut flakes into small pieces, in mini-chopper. Add to bowl.
- Chop raisins and add to bowl along with cinnamon. Mix well. Optional - add a pinch of salt.
- Turn mixture onto parchment lined or greased 8 x 11 glass baking dish. Bake 15 to 20 minutes until edges are lightly browned and toothpick inserted in center comes out clean.
- Cool and cut into 8 bars. Store leftover bars in airtight container and refrigerate.
