Instructions
  1. Preheat oven to 350 degrees.
  2. Add egg whites to a medium-sized mixing bowl and whisk well.
  3. Add walnuts to a mini-chopper and pulverize into a moist flour. Add to bowl.
  4. Pulse coconut flakes into small pieces, in mini-chopper. Add to bowl.
  5. Chop raisins and add to bowl along with cinnamon. Mix well. Optional - add a pinch of salt.
  6. Turn mixture onto parchment lined or greased 8 x 11 glass baking dish. Bake 15 to 20 minutes until edges are lightly browned and toothpick inserted in center comes out clean.
  7. Cool and cut into 8 bars. Store leftover bars in airtight container and refrigerate.
