Instructions
  1. Add coconut milk to a small glass bowl along with 1 cup water. For lite coconut milk add 2/3 cup coconut milk plus 2/3 cup water. Try a clean brand of unsweetened coconut milk like Thai Kitchen 2 Simple Ingredients.
  2. Whisk chia seeds into coconut milk and water. Split vanilla bean pod and scrape seeds into bowl. Or substitute with ground cinnamon. Add 5 to 10 drops of 100% pure Stevia liquid, to taste, or more if you like it sweeter. Optional - add a pinch of salt. Mix well, cover, and refrigerate.
  3. Wash peaches. Peel, remove pit, and cut into small pieces. If using frozen peaches, thaw completely. Optional - reserve some peach pieces as garnish. Add peaches to small bowl. Mash with fork or potato masher or add to blender cup and blend into a puree. Add 5 to 10 drops Stevia liquid to peach puree, to taste, or more if you like it sweeter. Mix well.
  4. Divide peaches into three small serving cups or dessert bowls. Top each serving with one third of the chia pudding. Optional garnish - top each serving with reserved peach pieces. Zest the rind of a lime and sprinkle on top of peaches. Cover and return pudding to refrigerator until chilled about an hour or more.
  5. Refrigerate overnight to take as an easy to-go breakfast the next morning.
