Orange Almond Broccoli Salad

- 1 large head broccoli about 4 cups chopped
Fresh Fruit
- 2 large orange[s]
Nuts - Seeds
- 2.25 oz sliced almonds about 1/2 cup

Instructions
- Remove stem and leaves from head of broccoli. Cut into florets.
- Chop broccoli, using more florets than stems. Measure 4 cups and add to large mixing bowl.
- Peel oranges, cut away excess pith {bitter white membranes}. Slice oranges. Remove seeds and divide sections. Add to bowl.
- Make low calorie mock mayonnaise, recipe link follows. Mix into broccoli salad.
- Add almonds and gently mix. Optional - reserves some of the almonds to use as garnish.
- If using, add salt and pepper, to taste.

Low Cal Mock Mayo - add 7 oz. plain whole milk Greek yogurt to small bowl. Whisk in 1 tablespoon each: avocado oil or extra virgin olive oil, Dijon mustard {w/o added sugar like Maille brand}, apple cider vinegar. Stir in 10 drops Stevia liquid or 1 small packet Stevia powder.
