Instructions
  1. Preheat oven or toaster oven to 325 degrees.
  2. Add ground turkey to large bowl. Wash apple and onion. Cut apple in half skin on, remove core and stem. Grate one-half apple into bowl. Mince 1/2 cup onion in a mini chopper or finely mince by hand. Add to bowl along with mustard and seasoning. Mix well. If using, add salt and pepper, to taste.
  3. Lightly spray 6 muffin tins with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil} or line muffin tins with cupcake papers.
  4. Divide mixture evenly among the 6 cups, pressing it down into the muffin tin with the back of a spoon.
  5. Place muffin tin on a baking sheet. Carefully add about 3/4 cup water to baking sheet to keep meatloaf moist while baking.
  6. Bake meatloaf muffins 25 to 35 minutes or turkey is cooked through. Remove muffin tin but leave baking sheet and water to cool before removing from oven. Remove mini meatloaf from muffin tin.
  7. Optional - serve with all-natural picante sauce without added sugar or oil or Dijon mustard without added sugar like Maille brand.
