Mango Gazpacho

Ingredients
Fresh Fruit
- 1 small mango
- 1 lime
Fresh Vegetables
- 2 small yellow tomatoes
- 1/2 large English or regular cucumber[s] peeled
Fresh Herbs - Spices
- 1 small clove garlic
Optional Garnish
- fresh mint leaves
- crushed red pepper flakes for spicy gazpacho

Instructions
- For the most flavorful gazpacho, start with a ripe mango and ripe yellow tomatoes. Wash all ingredients.
- Remove stem from tomatoes, quarter, and add to blender. Cut cucumber in half, peel, chop into pieces, and add to blender.

- Peel and press or mince small garlic clove. Add to blender with fresh-squeezed juice of 1 lime. Blend on high until smooth and creamy.
- Refrigerate until chilled. Divide into two soup mugs or bowls. Optional- add salt and pepper, to taste. Optional Garnish - garnish with sprigs of fresh mint leaves and/or dash of crushed red pepper flakes {spicy}.
