- 6 extra large eggs hard boiled
Condiments
- 1/4 cup Skinny5 low-cal mock mayo recipe link included, or use avocado mayonaise which is not low calorie
Dried Spices - Seasonings
- 1/4 teaspoon ground mustard
Optional Garnish
- 1/2 teaspoon smoked or sweet paprika
- fresh chives

Instructions
- Add eggs to large pot. Fill halfway with water. Place on stove over high heat. Set timer for 17 minutes.
- As soon as timer goes off, remove pot from stove. Place pot in sink and run cold water into pot. Cool eggs completely.
- In the meantime, make Skinny5 low calorie mock mayonnaise and set aside. Or use avocado mayonnaise or other mayonnaise. Note - avocado mayonnaise or other mayonnaise is not low calorie.
- Once hard boiled eggs are completely cooled, peel, and slice in half lengthwise. Add yolks to a small bowl. Set egg whites aside.
- Mash yolks. Mix in mayonnaise and dried mustard. Optional - add salt and pepper, to taste. Fill egg whites with yolk mixture.
- Optional garnish - top each deviled egg with a sprinkle of paprika and a snip of fresh chive, as pictured.
- Store eggs in an airtight container with a lid and keep in refrigerator until served.

Skinny5 Low Cal Mock Mayo - add 7 oz container or 1 cup plain whole milk yogurt to a small bowl. Whisk in 1 tablespoon each: avocado oil or extra virgin olive oil, apple cider vinegar, Dijon mustard {w/o added sugar}. Stir in 1 small packet Stevia powder or 10 drops 100% Stevia liquid.
