Instructions
- Use your favorite {clean} store bought hummus or dip. Or make Keto Diet friendly Roasted Veggie Walnut Dip or Paleo Diet friendly No Bean Butternut Squash Hummus, recipe links follow.
- Wash cucumber[s] and chives. Slice off ends of cucumbers and discard. Using a mandolin or a very sharp knife, slice cucumber[s] into thin planks.
- Arrange two cucumber planks on on top of another in the shape of a cross. Add a scant tablespoon of hummus or dip in the center where the planks overlap.
- Fold one half of the inside plank over the hummus or dip, and then fold the other half of the inside plank over the hummus or dip.
- Bring one half of the outside over the hummus or dip, and then fold the other half of the outside plank over the top.
- If cucumber planks are too long, trim to size with kitchen scissors.
- Center a long slender chive under the hummus "puff." Bring each end of the chive up over the pillow and tie in a knot in the center of the "puff." Snip ends of chive if too long.
- Repeat until all cucumber planks are used. Note - you can also use zucchini planks in place of cucumbers.
