  • 4 cups boneless skinless chicken breasts or use leftover turkey breast

  • 10 oz bag frozen pineapple or use 2C fresh pineapple chunks

  • 1 cup sliced celery 1 to 2 stalks celery

  • 1/2 cup walnut pieces or use pecan pieces

Instructions
  1. Add fresh or frozen pineapple chunks to a colander placed over a large bowl to drain juice. Set aside.
  2. If not using leftover chicken, cook and cool. Cube chicken or turkey. Measure 4 cups and add to large mixing bowl.
  3. If using, wash and remove ribs from celery. Slice celery and add 1 cup to bowl along with walnut or pecan pieces, if using.
  4. Add drained fresh or thawed frozen pineapple chunks to bowl.
  5. If using, add salt and pepper, to taste.
  6. Make Low-cal Mock Mayo by whisking one tablespoon each: extra virgin olive oil, apple cider vinegar, Dijon mustard {w/o added sugar} into 7 oz. container or 1 cup plain whole milk Greek yogurt. Mix mock mayo into salad.
  7. Optional Garnish—arrange lettuce in bottom of four serving bowls and top with chicken salad.

Low Cal Mock Mayo - add 7 oz. plain whole milk Greek yogurt to small bowl. Whisk in 1 tablespoon each: avocado oil or extra virgin olive oil, Dijon mustard {w/o added sugar like Maille brand}, apple cider vinegar. Stir in 10 drops Stevia liquid or 1 small packet Stevia powder.
