Instructions
  1. Process walnuts into a fine flour using a mini chopper. Add to a medium-sized bowl along with ground turkey, egg white, cheese of choice, and Italian seasoning. Mix well. If using extra large egg, use about half of the egg white {or double this recipe and use the whole egg white}.
  2. Lightly spray a skillet or large frying pan with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil}. Gently warm over medium heat.
  3. Form 8 to 10 small balls with meat mixture and add to pan. Cook about 3 to 5 minutes or until lightly browned. Turn meatballs over and cook about 3 to 5 minutes or until lightly browned on other side. Keep turning meatballs until browned on all sides and cooked through.
  4. This recipe is a half recipe or 2 servings and makes 8 to 10 small meatballs. Double ingredients for a full recipe or 4 servings which makes 16 to 20 small meatballs.
  5. Note - goes well with "riced" cauliflower pilaf. Or marinara sauce and zucchini noodles.
