Gluten Free Irish Beef Stew

Ingredients
Meat
- 2 pounds beef sirloin tip steak choose a lean cut of grass-fed beef
Fresh Vegetables
- 1 pound potatoes use new or mini potatoes with skin on to reduce the carb load, 12 to 16 new potatoes equals 1 pound
- 1 pound carrot[s] 8 to 10 medium carrots or about 4 cups sliced
- 1 large onion about 2 cups diced
Canned - Jarred
- 2 - 32 ounce containers organic beef broth choose a brand w/o added sugar or oil like Field Day
Optional
- Italian or flat-leaf parsley optional garnish
- 2 tablespoons cassava flour if you like a stew with thicker gravy

Instructions
- Cube sirloin, cutting away and discarding excess fat. Wash vegetables. Peel onion and dice. Heat a bit of avocado or extra virgin olive oil over medium-high heat in a dutch oven or large soup pot. Add sirloin and 2 cups diced onion and cook until browned.
- Add beef broth. Bring to a boil. Skim any foam that forms on top and discard. Reduce heat, cover and simmer for 30 minutes.
- In the meantime, remove ends of carrots and discard. Slice carrots and set aside. Use new or mini potatoes with skin on to reduce the carb load. Cut larger new or mini potatoes in half. If using regular potatoes, peel and dice with or without skin.
- Add carrots and potatoes to pot. Bring to a boil. Reduce heat and simmer uncovered about 30 to 45 minutes or until vegetables are tender and broth thickens. Add salt and pepper, to taste.
- Optional - for a thicker broth or gravy, add 2 tablespoons cassava flour to a small bowl. Whisk in 1/4 cup beef broth to make a slurry. Add to pot with carrots and potatoes.
- Optional Garnish - garnish each serving with fresh chopped Italian or flat leaf parsley.
- CROCK POT METHOD - brown beef and onions. Add to crock pot with broth, sliced carrots and potatoes. Cook 4 to 5 hours or until broth thickens and vegetables are tender. Optional - add 2 tablespoons cassava flour to a bowl, whisk in 1/4 cup of the beef broth to make a slurry. Add to crock pot at start of cooking.
