Instructions
  1. Fill a large pot halfway full of water. Add pinch of salt. Bring to a boil. Add shrimp. Boil 3 to 5 minutes or until shrimp turn a red-orange color. Remove from stove. Carefully pour into colander to drain.
  2. Wash lettuce. Add to salad spinner and spin to remove excess water. Divide lettuce between 2 pasta bowls or dinner plates. Arrange half of the cooked shrimp on each plate.
  3. Prepare low calorie vegetables of choice. Add to salads. Serve each salad with 4 tablespoons or 1/4 cup Skinny5 Reduced-calorie Balsamic Dressing {recipe follows} or another Skinny5 reduced-calorie salad dressing of choice.
  4. Skinny5 Reduced-calorie Balsamic Dressing - in a large jar with a tight fitting lid, add 1/2 cup balsamic dressing, 1/4 cup extra virgin olive oil, juice of 1 large lemon fresh-squeezed, 1 tablespoon Dijon mustard {w/o added sugar like Maille brand}, 60 drops Stevia liquid or 5 to 6 small packets Stevia powder. Shake well. If dressing is not sweet enough add more Stevia, to taste. If using, add salt and pepper, to taste. Recipe makes enough for 3 tablespoons dressing for 3 salads for 2 for 1 week of Skinny5 Jump Start meal plan.
