Eggplant Pizza Rounds

Ingredients
Jarred - Canned
- 1 cup pizza sauce w/o added sugar like Muir Glen brand or leftover pasta sauce w/ground turkey or chicken or cocktail tomatoes, chopped
Fresh Vegetables
- 1 large eggplant
- 2 tbsp onion minced
- 2 cloves garlic pressed or minced
Dairy
- 1 cup fat-free mozarella cheese shredded
Optional
- basil leaves
- low-cal veggies of choice like mushrooms, bell pepper, spinach, arugula, etc.

Instructions
- Preheat oven to 450 degrees. Peel and press or mince garlic clove. Add to pizza sauce. If using fresh tomatoes, chop and mix with garlic. Set aside. Shred cheese and set aside.
- Mince and sauté fresh vegetable toppings before using. Lightly spray a skillet with propellant-free cooking spray oil {avocado, coconut, extra virgin olive oil} and warm over medium heat. Add vegetables and cook until tender. Remove from heat. Set aside.
- Slice eggplant into thick round slices, discarding ends. Arrange on a parchment lined baking sheet. Top each round with a bit of sauce and some toppings. Top with shredded cheese. If using, add salt and pepper, to taste.
- Bake 15 to 20 minutes or until eggplant rounds are just tender or cooked al dente.
