Easy Steamed Spinach

- 2 - 5 oz containers baby spinach leaves

- 1/2 lime

- 1 tsp unrefined cocount oil be sure to measure oil and only use 1 teaspoon per serving as it's high in calories

Instructions
- Even if spinach is pre-washed we recommend washing.
- Stove top method - add a steaming basket to a large pot and fill with water to bottom of basket. Place on stove over high heat. Bring water to a boil. Add spinach, cover with lid, and remove from heat. Let stand1-2 minutes. Turn spinach with tongs. Replace lid and let stand 1-2 minutes longer. Immediately remove spinach from pan to prevent over cooking or spinach will lose it's color.
- Microwave method - add washed spinach to salad spinner to remove excess water. Place damp spinach in a large glass microwave safe bowl with a lid or cover with a dinner plate. Microwave on high for 2 minutes.
- Place cooked spinach on paper towels to absorb excess water. Slice bunch of spinach with a sharp knife, divide among 2 bowls. Stir and if using, add salt and pepper, to taste.
- Optional - mix 1 teaspoon unrefined coconut oil and a squeeze of fresh lime juice into each serving of spinach.
