Instructions
  1. Preheat oven to 350 degrees. Line a glass pie pan with parchment paper. Set aside.
  2. Add walnuts to a mini chopper and process into a fine flour. Pour into a large bowl. Add ground meat of choice, shredded cheese of choice, and Italian seasoning. If using, add salt and pepper, to taste.
  3. Separate egg white from yolk. Do not use egg yolk. Add egg white to bowl. Mix well. Use a heaping tablespoon of meat to form small golf ball size meatballs and add to pie pan. Repeat until all meat mixture is used.
  4. Bake for about 30 minutes or until meatballs are cooked through.
  5. This recipe is a half recipe or 2 servings and makes 8 to 9 meatballs. Double ingredients for a full recipe or 4 servings which makes 16 to 18 meatballs.
