Instructions
  1. Wash cucumber, cut off ends, and discard. Using a vegetable peeler, slice the skin as pictured. Slice cucumber in 2 inch pieces. Using a melon baller, scoop seeds out of middle of cucumber, forming a small "cup". Place cucumbers on paper towel to absorb excess water. Note - if you don't want to make cucumber cups, simply slice cucumber skin on and add tuna to individual slices.
  2. Add tuna to a medium-sized bowl. Mince onion and your choice of celery or red bell pepper. Add to bowl. Make low cal mock mayo, recipe link follows. Mix mayo into tuna salad. Add a spoonful of tuna salad to each cucumber cup and serve.
  3. Low Calorie Mock Mayonnaise recipe - add 1/2 cup plain whole milk Greek yogurt to a small bowl. Whisk in 1-1/2 teaspoon each of the following: extra virgin olive oil, apple cider vinegar, Dijon mustard w/o added sugar like Maille brand. Add 5 drops pure Stevia liquid and mix well.
