- 2 English or regular cucumber[s] or use zucchini
- 1 dry pint grape tomatoes

- 1 recipe roasted veggie walnut dip or any dip or hummus of choice

Instructions
- Make Roasted Veggie Walnut Dip or use any dip or hummus of your choice like No Bean Butternut Squash Humus {find recipe links below}.
- Wash vegetables. Slice grape tomatoes in half down the middle. Remove ends of cucumber, discard. Slice cucumber into thin rounds.
- Add a bit of dip to end of cucumber slice, top with tomato half, and roll up as pictured. Use a toothpick to secure end of cucumber.
- Arrange cucumber roll ups on a decorative plate and serve.
