Instructions
  1. Make Roasted Veggie Walnut Dip or use any dip or hummus of your choice like No Bean Butternut Squash Humus {find recipe links below}.
  2. Wash vegetables. Slice grape tomatoes in half down the middle. Remove ends of cucumber, discard. Slice cucumber into thin rounds.
  3. Add a bit of dip to end of cucumber slice, top with tomato half, and roll up as pictured. Use a toothpick to secure end of cucumber.
  4. Arrange cucumber roll ups on a decorative plate and serve.
