Instructions
  1. If not using leftover chicken, cook and cool. Finely chop chicken and add to a large bowl. Note - try using leftover chicken fajita or chicken taco meat.
  2. Wash celery and onion. Chop and add to bowl. Chop walnuts or pecans. Add to bowl.
  3. If using, add salt and pepper, to taste. Mix in 1/2 recipe or about 1/2 cup low calorie mock mayonnaise, recipe follows.
  4. Low-cal Mock Mayonnaise {1/2 cup} - add half of a 7 oz. container or about 1/2 cup plain whole milk Greek yogurt to a small bowl. Whisk in 1-1/2 teaspoon each of the following: extra virgin olive oil, apple cider vinegar, Dijon mustard {w/o added sugar}. Mix in 5 drops 100% pure Stevia liquid.
  5. Optional - serve chicken salad on lettuce leaves. Cut stem off bottom of head of lettuce. Divide leaves. Wash and add to a salad spinner to remove excess water.
  6. NOTE - if taking this to go, do not add chicken salad to lettuce leaves, cucumbers, or bell pepper wedges until just before serving.
  7. Optional Garnish - garnish with julienne carrots and chopped Italian or flat-leaf parsley.
