Instructions
- If not using leftover chicken, cook and cool. Finely chop chicken and add to a large bowl. Note - try using leftover chicken fajita or chicken taco meat.
- Wash celery and onion. Chop and add to bowl. Chop walnuts or pecans. Add to bowl.
- If using, add salt and pepper, to taste. Mix in 1/2 recipe or about 1/2 cup low calorie mock mayonnaise, recipe follows.
- Low-cal Mock Mayonnaise {1/2 cup} - add half of a 7 oz. container or about 1/2 cup plain whole milk Greek yogurt to a small bowl. Whisk in 1-1/2 teaspoon each of the following: extra virgin olive oil, apple cider vinegar, Dijon mustard {w/o added sugar}. Mix in 5 drops 100% pure Stevia liquid.
- Optional - serve chicken salad on lettuce leaves. Cut stem off bottom of head of lettuce. Divide leaves. Wash and add to a salad spinner to remove excess water.
- NOTE - if taking this to go, do not add chicken salad to lettuce leaves, cucumbers, or bell pepper wedges until just before serving.
