- 1/2 lb wild-caught salmon

- 1 orange
- 1 lemon

- Ancho chili pepper powder

Instructions
- Wash orange and lemon. Slice lemon into wedges and set aside. Slice orange, skin on and discard ends.
- Lightly spray a frying pan or skillet with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil} and warm over medium-high heat.
- Add orange slices to pan and top with salmon fillet[s], skin side down. Lightly spray salmon with cooking oil spray and sprinkle with Ancho chili powder and orange zest. Cover pan and cook 5 to 7 minutes.
- Remove salmon from pan. Turn orange slices over and replace salmon skin side down. Cover pan and continue cooking 3 to 7 minutes longer or until salmon is cooked through and flakes apart when cut with a fork.
- Note - depending on thickness of salmon filet and whether you're cooking 1 or 2 salmon fillets, salmon may take more or less time to cook.
- Remove pan from heat. Divide the salmon in half and place on 2 dinner plates. Top with orange slices and serve with lemon wedges.
- Optional Garnish - sprinkle with caraway seeds and fresh thyme leaves before serving.
