Ingredients
Frozen Fruit
- 10 ounce package frozen bananas or 2 cups ripe bananas sliced and frozen
Dried Spices - Seasonings
- 2 teaspoons cocoa powder or raw cacao powder
- 2 inch piece vanilla bean
Canned - Jarred
- 2 tablespoons full fat coconut milk or more, if needed to help blend
- 2 tablespoons unsweetened cashew butter or almond or other nut butter w/o sugar or oil
Optional Garnish
- fresh strawberries, sliced
- fresh mint leaves

Instructions
- If using fresh ripe bananas, peel, slice, and freeze overnight.
- Add frozen banana slices, cocoa or raw cacao powder, unsweetened cashew or other nut butter, and coconut milk to inverted blender cup of blender or use small bowl of a food processor.
- Cut about a 2-inch piece of vanilla bean. Split lengthwise and scrape seeds into blender cup.
- Blend until mixture resembles soft serve ice cream in consistency. If needed, add more coconut milk to help blend.
- Eat right away or transfer to individual dessert bowls or small container, cover, and freezer until firmer.
- Optional Garnish - serve with fresh sliced strawberries and sprig of mint.
