Instructions
  1. Wash cumbers, remove ends, and discard. Cut four thin slices from one of the cucumbers and reserve as garnish if desired.
  2. Peel, seed, and chop remaining cucumbers. Add to blender along with dried onion flakes.
  3. Wash lemons and zest rind with a zester tool. Add lemon zest to blender with cucumber and onion. Blend until smooth.
  4. Transfer soup mixture to a small glass mixing bowl and whisk in sour cream. Cover and refrigerate until chilled.
  5. Add chilled soup to four small clear cups or glasses.
  6. Optional garnish individual servings with pine nuts, fresh ground pink peppercorns, minced Italian parsley leaves or chopped chives, and a cucumber slice as pictured.
