Chicken Tortilla-less Soup

Ingredients

- 1/2 lb boneless skinless chicken breast about 1 large chicken breast
Canned - Jarred
- 14.5 oz can chicken broth choose a clean brand w/o added sugar or oil like Field Day Organic
- 14.5 oz can stewed tomatoes w/o added sugar like Muir Glen brand
- 4 oz can chopped green chilies
Fresh Vegetables
- 1/2 medium onion about 1 cup chopped
Optional Garnish
- 1/2 cup reduced fat Mexican 4 cheese

Instructions
- Cube chicken. Lightly spray soup pot with propellant-free 100% oil cooking oil {avocado, coconut, extra virgin olive oil} and warm over medium-high heat. Add chicken and saute until lightly browned. Remove from heat and set aside.
- Pulse stewed tomatoes in food processor. Add to a soup pot along with chicken broth and chilies. Wash onion and chop half. Add 1 cup chopped onion to soup pot.
- Bring to a boil, reduce heat, cover and simmer 30 to 45 minutes or until chicken is tender.
- Optional Garnish - garnish each bowl of soup with 1/4 cup reduced-fat, shredded Mexican 4 cheese.
