Chicken Stir-fry

Ingredients
Meat - Seafood
- 1/2 lb boneless skinless chicken breast about 1 large chicken breast
Fresh Herbs - Spices
- 2 tbsp fresh ginger root peeled and minced
- 2 cloves garlic peeled and pressed or minced
Frozen Vegetables
- 10 to 12 oz bag stir-fry vegetabels choose a brand w/o added corn, soy beans, and noodles
Condiments
- 2 tbsp coconut aminos

Instructions
- Cube chicken. Wash, peel, and mince ginger and garlic.
- Lightly spray a wok or large frying pan with propellant-free 100% oil cooking oil spray. Add chicken, ginger, and garlic to wok or pan. Cook 5 to 10 minutes or until chicken is almost cooked.
- Add stir-fry vegetables and cook 3 to 5 minutes longer or until vegetables are just tender. Remove from heat. Stir in coconut aminos. If using, add salt and pepper, to taste.
- Optional - serve with extra coconut aminos and "riced" cauliflower or broccoli.
