Chicken Kabobs

Ingredients
Meat
- 1/2 lb boneless skinless chicken breasts 8 ounces, about 1 breast
Fresh Vegetables
- 1 large orange bell pepper our use yellow, red, or green
- 1 medium zucchini
- 1 dry pint cocktail tomatoes or 1 red onion sub onion or any other low cal veggie if you don't like tomatoes
Dried Spices - Seasonings
- 2 tbsp Skinny5 Greek Seasoning recipe link follows or use Greek Seasoning w/o sugar, starches, chemicals

- wood or metal Shish Kabob Skewers or simply broil meat and vegetables in foil

Instructions
- Place rack in position closet to broiler while still leaving enough room so that shish kabobs don't touch the broiler elements. Turn oven or toaster broiler on to preheat. For oven set broiler to low and leave oven door ajar so broiler remains on.
- Wash vegetables. Slice zucchini, discarding ends. Remove stem, membranes, and seeds from bell pepper. Cut pepper into pieces as pictured. If using, cut onion into pieces equal in size to bell pepper pieces. Cut chicken breast into chunks.
- Line a baking sheet with foil. Set oven broiler to low or broil in toaster oven. Alternate meat and vegetables and add to skewers. Add skewers to baking sheet. If you don't have skewers, no worries, just broil a mix of meat and veggies placee on top of foil.
- Lightly spray kabobs with propellant-free cooking oil spray {avocado, coconut, or extra virgin olive oil}. Sprinkle with half of the Greek seasoning {recipe link follows}. Turn kabobs over, lightly spray with cooking oil. Sprinkle with remaining half of Greek Seasoning.
- Place baking sheet on rack closet to broiler and broil 5-10 minutes or until vegetables are lightly browned. Remove kabobs from oven, turn over using tongs and then broil 5-10 minutes longer or until chicken is cooked through.
- If using, add salt and pepper, to taste.
- Note - you can also grill the kabobs on the barbecue.
- Greek Seasoning recipe - mix 1 tablespoon onion powder with 1 teaspoon each of the following: spearmint, garlic powder, ground oregano. If you don't have spearmint you can use a mint tea bag. Cut tea bag open and measure out 1 teaspoon mint leaves.
