Chicken Broccoli Soup

Ingredients
Jarred - Canned
- 32 oz container chicken broth choose a clean brand w/o added sugar or oil like Field Day Organic
Meat
- 1/2 lb boneless skinless chicken breasts 8 ounces or 2 servings of 4 oz each
Fresh Vegetables
- 1 head broccoli about 2+ cups florets, chopped
- 2 large carrots about 1 cup, sliced
- 1 large celery stalk about 1/2 cup, sliced

Instructions
- Add chicken broth to soup pot and bring to a boil. Cube chicken and add to pot. Reduce heat, cover pot and simmer 30 minutes, or until chicken is tender.
- In the meantime wash and prepare vegetables. Peel and slice carrot. Measure 1 cup and set aside. Slice celery, measure 1/2 cup and set aside. Cut stem and leaves from head of broccoli. Cut into florets and chop, using more floret than stem. Set aside.
- Once chicken is tender, add carrots to soup pot. Return to a boil, reduce heat, cover and simmer 10 minutes. Add celery, bring to a boil, cover and simmer 10 to 15 minutes or until vegetables are just tender. Add chopped broccoli florets and cook 3 to 5 minutes longer or until broccoli is just tender.
