Chicken Avo Egg Salad

- 1/2 lb boneless skinless chicken breast about 1 large chicken breast

- 1 small Hass avocado
- 1/2 - 5 oz container baby spinach

Instructions
- Add eggs to a small saucepan and cover with water. Place on high heat and set timer for 17 minutes. Remove pan from heat when timer goes off. Set in sink and run cold water into pan. Remove cooled eggs and set aside.
- In the meantime, cube chicken. Lightly spray a skillet or frying pan with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil}. Gently warm over medium heat. Add cubed chicken and saute about 10 to 15 minutes or until chicken is cooked through. Set aside to cool. Or use pre-cooked, cubed chicken.
- Remove skin and pit from avocado. Chop and add to bowl. Peel hard boiled eggs. Chop and add to bowl along with cooled chicken cubes. Wash spinach, add to salad spinner to remove excess water and add to large bowl.
- Make Skinny5 low calorie mock mayonnaise by mixing 1/2 cup plain whole milk Greek yogurt with 1 tabelspoon of each of the following: extra virgin olive oil, apple cider vinegar, Dijon mustard {w/o added sugar like Maille brand}. Mix in 5 drops of 100% pure Stevia liquid.
- Add mock mayonnaise to bowl and gently mix all ingredients together. If using, add salt and pepper, to taste. Divide between 2 dinner plates and serve.
