Instructions
  1. Steamed - add a steaming basket to a large pot. Add water up to the bottom of the steaming basket. Arrange vegetables in steaming basket. Cover pan. Bring water to a boil over high heat. Reduce heat to medium or medium-low and continue 3 to 5 minutes or until vegetables are tender.
  2. Roasted veggies - preheat oven to 425 degrees. Line a baking sheet with parchment paper. Arrange vegetables in a single layer. Lightly spray with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil}. If using, add salt and pepper, to taste. Roast 10 to 12 minutes. Remove from oven. Turn over with tongs lightly spray with cooking oil and return to oven. Continue roasting 10 to 12 minutes longer or until vegetables are tender.
