Instructions
  1. Wash bell pepper and tomatoes or oranges, if using. Slice your choice of tomatoes or oranges and arrange each one on a dinner plate. Set aside. Remove stem, membranes and seeds from bell pepper and slice into thick rounds as pictured.
  2. Lightly spray skillet or frying pan with propellant-free 100% oil cooking oil spray {avocado, coconut, or extra virgin olive oil}. Gently warm over medium heat. Add four bell pepper rings to pan. Crack one egg into each pepper ring. Add any herbs or spices of choice.
  3. Cook eggs sunny side up or flip for eggs over easy taking care not to break yolk when turning.
