Apple Broccoli Salad

- 1 head broccoli about 3 cups florets
Fresh Fruits
- 1 large red apple
Nuts - Seeds
- 1/2 cup cashew Pieces or use almond or walnut pieces
Dried Spices - Seasonings
- 1/2 tsp Garam Masala spice

Instructions
- Wash and chop broccoli, using mainly florets verses stems. Measure 3 cups chopped broccoli florets and add to a large mixing bowl.
- Wash and quarter large apple. Remove seeds and stem. Chop apple skin on, add to bowl along with nuts and Garam Masala.
- Mix in one cup low cal mock mayo {recipe link follows}, no need to measure, use entire recipe. Stir until everything is well coated.
- If using, add salt and pepper, to taste.

Low Cal Mock Mayo - add 7 oz. plain whole milk Greek yogurt to small bowl. Whisk in 1 tablespoon each: avocado oil or extra virgin olive oil, Dijon mustard {w/o added sugar like Maille brand}, apple cider vinegar. Stir in 10 drops Stevia liquid or 1 small packet Stevia powder.
